My favorite summer activity…and a recipe

I’m a bird watcher…a serious one. I rarely go anywhere without my binoculars in tow. And summer for me means HUMMINGBIRDS! They arrive in April, usually right around tax day, the 15th, and they don’t depart for their winter in South America until late September.
When I first spot them in April, they’ll be quite active at my feeders for a couple of weeks, and then they’ll disappear for a month or two. This is the time the females are on the nest, and the males are busy feeding them insects. They need the protein of the bugs more than the sugar syrup I supply, so I rarely see them at the feeders again until July.
Now, in August, they’re camping out at my feeders. I’m seeing lots of new babies, though they’re difficult to distinguish from their parents because they emerge from the nest full grown.
I love this time of year in the mountains. Indian summer is just beginning, and the hummers are bulking up for their long, long journey in the fall. By the time they leave my feeders, they’ll be fat as ping pong balls. I’ll miss them.
On another note, while I’m entrenched in summer bird watching, I spend much less time in the kitchen. Who wants to heat up the oven? So, I resort to easier recipes. Here’s one from Mastering the Art of French Cooking, the classic from Julia Childs (I’m a huge fan). I have a few favorites from this book, and the following provides a nutritious, light dinner and a fine presentation. Enjoy!’
Riz a L’Orientale (vegetarian rice bowl)
For 4 servings…
4 cups hot steamed rice
1 cup minced onions cooked in butter and herbs
1 cup diced eggplant sautéed in oil and garlic
1/3 cup chopped walnut meats
12 cherry tomatoes, halved
Salt and pepper
1 omelet, cut into strips
With the hot rice in a roomy saucepan, deftly fluff in the onions, eggplant, walnuts, and cherry tomatoes. Season carefully to taste and turn into warm bowls. Decorate with omelet strips and sprinkle with parsley.
Pass chopsticks to your guests.
Susan Blexrud grew up in Orlando, Florida, and now lives in Asheville, North Carolina, with her husband of 27 years, John, who proposed to her on New Year’s Eve 1985 on the Venice-Simplon Orient Express, halfway between Paris and Vienna. Their son Chris lives and works in Manhattan, and daughter Allison is a college junior. Susan has a Chihuahua named Baby and a cockatiel named Romeo. She is an avid reader, and she leads two monthly book clubs in Asheville. She is a walker and Yoga enthusiast. She enjoys quilting and bird watching (loves hummingbirds), and most of all, writing her next story.
